Su sabor se asemeja al 92% de la sacarosa, pero<b> aporta solo un tercio de las calor\u00edas.<\/b> La<b> FDA y la OMS<\/b> la reconocen como segura para el consumo. A diferencia de la sacarosa y de los edulcorantes artificiales, esta mol\u00e9cula natural presenta un bajo \u00edndice gluc\u00e9mico: <b>no provoca aumentos en los niveles de insulina<\/b> como otros az\u00facares, lo que la convierte en una opci\u00f3n para personas con diabetes o trastornos metab\u00f3licos.<\/p>\n<p>Para los expertos, las primeras investigaciones sugieren que la tagatosa podr\u00eda beneficiar la salud bucal al limitar el desarrollo de bacterias asociadas a la caries y contribuir al equilibrio del microbioma oral. Utilizaron ingenier\u00eda gen\u00e9tica en <b>Escherichia coli<\/b> para transformar estas bacterias en peque\u00f1as \u201cf\u00e1bricas\u201d productoras, gracias a la introducci\u00f3n de una enzima clave tomada del moho mucilaginoso.<\/p>\n<p>Nik Nair, ingeniero biol\u00f3gico de Tufts, explic\u00f3: \u201c<b>Desarrollamos una forma de producir tagatosa <\/b>mediante la ingenier\u00eda de la bacteria Escherichia coli para que funcione como peque\u00f1as f\u00e1bricas, cargadas con las enzimas adecuadas para procesar abundantes cantidades de glucosa en tagatosa\u201d.<\/p>\n<p>El proceso utiliza una fosfatasa espec\u00edfica para galactosa-1-fosfato, extra\u00edda del moho mucilaginoso, que convierte la glucosa en galactosa. Luego, una segunda enzima transforma esa galactosa en tagatosa. Los ensayos de laboratorio demostraron avances importantes: el proceso alcanz\u00f3 rendimientos del 95%, muy superiores a los de m\u00e9todos anteriores, que oscilaban entre el 40% y el 77%.
