Los <b>l\u00e1cteos enteros<\/b> exigen una evaluaci\u00f3n m\u00e1s matizada, porque no todos act\u00faan igual y su impacto depende tambi\u00e9n del alimento que los sustituya en la dieta.<\/p>\n<p>La publicaci\u00f3n parte de una confusi\u00f3n extendida sobre <b>cu\u00e1les grasas son saludables y cu\u00e1les no<\/b>. La investigaci\u00f3n tambi\u00e9n se\u00f1ala otros efectos da\u00f1inos, como el empeoramiento del control de la insulina, la acumulaci\u00f3n de grasa en el h\u00edgado y la disfunci\u00f3n de los vasos sangu\u00edneos\u201d.<\/p>\n<p>Sobre el efecto de los aceites vegetales, Willett dijo: \u201cPor el contrario, numerosos estudios demuestran que el consumo de aceites de semillas mejora los niveles de colesterol, con decenas de ensayos aleatorios realizados \u00fanicamente con aceite de canola\u201d. Se\u00f1ala que <b>las grasas insaturadas favorecen la acci\u00f3n de receptores en el h\u00edgado<\/b> que capturan el <b>colesterol LDL<\/b> del torrente sangu\u00edneo, mientras que las grasas saturadas tienden a reducir esa capacidad y permiten que m\u00e1s LDL permanezca en circulaci\u00f3n y se acumule en las arterias.<\/p>\n<h2>Qu\u00e9 pasa con los l\u00e1cteos enteros<\/h2>\n<p>Cuando se le pregunt\u00f3 si los l\u00e1cteos enteros son malos para la salud del coraz\u00f3n, el profesor respondi\u00f3: \u201cEsta respuesta es un poco m\u00e1s compleja. Depende del resultado que se est\u00e9 considerando y de si hablamos de manteca frente a otros alimentos ricos en grasas l\u00e1cteas, como el queso y el yogur\u201d.<\/p>\n<p>A continuaci\u00f3n, precis\u00f3 que la comparaci\u00f3n correcta no depende solo del alimento, sino de su reemplazo en la dieta. \u201cOtro aspecto clave es la comparaci\u00f3n: \u00bfqu\u00e9 se consume en lugar de grasas l\u00e1cteas? Los frutos secos o la mantequilla de man\u00ed ser\u00edan una alternativa m\u00e1s saludable al queso, mientras que la carne procesada ser\u00eda peor\u201d.<\/p>\n<p>El profesor tambi\u00e9n se refiri\u00f3 a las porciones. \u201cLas nuevas gu\u00edas alimentarias sugieren <b>tres porciones de l\u00e1cteos<\/b> al d\u00eda. Pero si todos fueran versiones enteras, esos alimentos por s\u00ed solos aportar\u00edan el <b>8% de las calor\u00edas<\/b> diarias en forma de grasas saturadas\u201d.<\/p>\n<p>A partir de ese c\u00e1lculo, formul\u00f3 una recomendaci\u00f3n en la entrevista con Harvard Health Publishing. \u201cRecomiendo limitarse a una porci\u00f3n de yogur o queso entero al d\u00eda, o quiz\u00e1s dos si no se consume carne, que es otra fuente importante de grasas saturadas en la dieta estadounidense t\u00edpica\u201d.<\/p>\n<h2>Qu\u00e9 grasas conviene priorizar en la dieta diaria<\/h2>\n<p>Sobre el <b>aceite de oliva<\/b>, Willet se\u00f1al\u00f3 que la revisi\u00f3n no lo destaca de forma especial porque no suele ser objeto de controversia. \u201cNumerosas investigaciones que datan de la d\u00e9cada de 1950 se\u00f1alan los beneficios para la salud del consumo de aceite de oliva, incluyendo mejoras en los riesgos cardiovasculares como el colesterol, la presi\u00f3n arterial y la diabetes\u201d.<\/p>\n<p>Tambi\u00e9n vincul\u00f3 ese punto con otros aceites l\u00edquidos de origen vegetal. \u201cComo mis colegas y yo descubrimos, reemplazar la mantequilla con aceite de oliva u otros <b>aceites vegetales l\u00edquidos<\/b> se asocia con un menor riesgo de morir por enfermedades card\u00edacas, lo cual coincide con los efectos sobre los niveles de colesterol observados en ensayos aleatorizados\u201d.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/lobosnews.com.ar\/wp-content\/uploads\/2026\/07\/que-grasas-conviene-priorizar-para-cuidar-el-corazon-segun-harvard-3.jpg\" alt=\"La dieta diaria puede priorizar aceite de oliva y otros aceites vegetales l\u00edquidos, adem\u00e1s de frutos secos, soja y legumbres, para reducir grasas saturadas y riesgo de enfermedades card\u00edacas (Imagen Ilustrativa Infobae)\" height=\"1536\" width=\"2752\"\/><\/p>\n<p>En el tramo final de la entrevista, el profesor llev\u00f3 la discusi\u00f3n al terreno pr\u00e1ctico. \u201cEn general, intenta incluir m\u00e1s fuentes vegetales de prote\u00edna, como <b>frutos secos<\/b>, <b>soja<\/b> y <b>otras legumbres<\/b>, en tu dieta, en lugar de carne roja y l\u00e1cteos. De esta forma, aumentar\u00e1s de forma natural tu consumo de grasas insaturadas y reducir\u00e1s el de grasas saturadas\u201d.<\/p>\n<p>Luego detall\u00f3 c\u00f3mo aplica ese criterio en casa: \u201cPara a\u00f1adir grasa, opta por aceites vegetales l\u00edquidos siempre que sea posible. En mi casa, usamos aceite de oliva para casi todo: en el pan, en los aderezos para ensaladas y para cocinar\u201d.<\/p>\n<p>Willett dijo: \u201cPero el aceite de canola o de soja es una buena opci\u00f3n si buscas un sabor m\u00e1s neutro. Tambi\u00e9n usamos ocasionalmente aceite de s\u00e9samo, aceite de mostaza y aceite de coco por sus sabores \u00fanicos\u201d.<\/p>\n<p>Para los productos envasados, la orientaci\u00f3n del medio apunta a revisar los ingredientes y la informaci\u00f3n nutricional.
